What you see here is freshly grated white cabbage and carrots. I am leaving it for a while to obtain sauerkraut, adding a bit of salt. I can not emphasise enough how beneficial for our gut is to eat fermented foods like for example vegetables! The great amount of probiotic ( means pro- life or for- life) bacterias we get from it does brilliant job for our health. Fermenting improves the taste of the food and what is the most incredible about all the process of fermentation is that it makes the food more digestible. As the cabbage has its own bacterias on it so there is not much to be done really, just leave it for itself to ferment, just crush it a bit with your hand before you leave it to ferment. The best would be the homemade sauerkraut as the ones from the shop are pasteurised which kills most of the beneficial bacterias…
I would not grate it so well without my Tefal Optitouch Activflow Technology 4 blades grater that I got from Santa- it did an amazing job in seconds, a must have in every kitchen!
